1/2 kg mutton mince (wash and drain well)
Pass through a colander
1/2-3/4 onion finely chopped (drain the water well)
1/2 pkt white onion soup
1tsp ground green chillies
1 heaped tsp dhana jeerroo
2 tsp fine red chillies
1 tsp wet tandoori masala
Chopped greens (spring onions, mint and green dhania)
Salt + fine black pepper
1 tbl lemon juice
1 egg to bind
Mix all ingredients well
Shape into small balls
Fry in hot oil
Lay on an oven proof dish combine butter, lemon juice and chillie powder
Pour over kebaabs and grill till nicely browned.
Serve with pita and roti and a dipping sauce with a side of thickly sliced onions
dusted with paprika and cubed cucumbers.
* fill kebaabs with a block of cheese for a cheesy kebaab.
